Easy Chicken Stew (Print Version)

# Ingredients:

01 - 1.5 pounds boneless skinless chicken thighs.
02 - 1 tablespoon olive oil.
03 - Salt and pepper to taste.
04 - 3 carrots, chopped.
05 - 1 yellow onion, chopped.
06 - 5 garlic cloves, chopped.
07 - 2 russet potatoes, peeled and diced.
08 - 2 tablespoons coconut aminos.
09 - 1 teaspoon salt.
10 - 3/4 teaspoon oregano.
11 - 1/2 teaspoon rosemary.
12 - 1 bay leaf.
13 - 2 1/2 cups chicken broth.
14 - 1 cup almond milk.
15 - 2 tablespoons cornstarch.

# Instructions:

01 - Cut chicken into 1/2-inch pieces, season with salt and pepper, then cook in olive oil until done.
02 - Add chicken, vegetables, seasonings, and broth to slow cooker.
03 - Cover and cook on LOW for 6 hours.
04 - Mix almond milk with cornstarch, stir into stew and cook on HIGH 30-45 minutes more.
05 - Season with extra pepper if needed and serve hot.

# Notes:

01 - Can use chicken breast instead of thighs.
02 - Works with any type of milk or potatoes.
03 - Browning chicken is optional but adds flavor.
04 - Freezes well for up to 3 months.
