Smothered Chicken with Jack Cheese (Print Version)

# Ingredients:

01 - 2 large chicken breasts.
02 - 1 tablespoon butter plus extra.
03 - 1 tablespoon minced garlic.
04 - 1 tablespoon smoked paprika.
05 - 2 tablespoons soy sauce.
06 - 1 medium onion, sliced.
07 - Salt to taste.
08 - 1/2 teaspoon black pepper.
09 - 1 tablespoon lemon juice.
10 - 2 teaspoons Worcestershire sauce.
11 - 1/2 pound sliced mushrooms.
12 - 2 slices Monterey Jack cheese.
13 - 1 tablespoon olive oil.

# Instructions:

01 - Pound chicken breasts to even thickness.
02 - Mix soy sauce, lemon juice, Worcestershire, garlic and paprika. Marinate chicken 30+ minutes.
03 - Sauté onions and mushrooms in olive oil until caramelized. Set aside.
04 - Cook marinated chicken in butter 5-7 minutes per side. Season with salt and pepper.
05 - Top chicken with cheese, cover until melted. Add sautéed vegetables.

01 - Longer marination improves flavor.
