Southern Smothered Chicken (Print Version)

# Ingredients:

01 - 2 pounds chicken thighs and/or drumsticks.
02 - 1 1/3 cups flour.
03 - 1 tablespoon onion powder.
04 - 2 teaspoons garlic powder.
05 - 2 teaspoons salt (divided for chicken and gravy).
06 - 2 teaspoons pepper (divided for chicken and gravy).
07 - 1 teaspoon poultry seasoning.
08 - 1 teaspoon paprika.
09 - 2/3 cup vegetable oil.
10 - 1 large onion, diced.
11 - 1 teaspoon chicken bouillon.
12 - 2 cups chicken broth.
13 - 1 cup milk.
14 - Parsley for garnish (optional).

# Instructions:

01 - Mix flour with onion powder, garlic powder, salt, pepper, poultry seasoning and paprika. Reserve 3 tablespoons.
02 - Dredge chicken pieces in seasoned flour mixture.
03 - Heat oil in large pan on medium. Fry chicken until browned on all sides. Remove chicken.
04 - In same pan, fry onions until golden. Add reserved flour and whisk.
05 - Add seasonings, broth, and milk. Whisk until smooth and boil 2-3 minutes.
06 - Return chicken to pan, cover with gravy. Cover and cook 30 minutes on medium, turning occasionally.

# Notes:

01 - Cook chicken in batches if pan is crowded.
02 - Chicken doesn't need to be fully cooked in first fry.
03 - Keep whisking gravy to prevent lumps.
