Easy Mediterranean Cheese Quesadillas (Print Version)

# Ingredients:

01 - 4 medium tortillas (flour, whole wheat, or gluten-free)
02 - 2 cups fresh spinach, chopped
03 - 1 cup feta cheese, crumbled
04 - 2 tablespoons olive oil or butter for cooking

05 - 1/4 cup sun-dried tomatoes, chopped
06 - 1/4 cup black olives, sliced
07 - 1/2 cup cooked grilled chicken, diced

# Instructions:

01 - Rinse and chop the spinach. Crumble the feta cheese into a bowl. Prepare any optional add-ins if using.
02 - Lay out a tortilla and spread spinach and feta evenly on one half. Add optional ingredients if desired. Fold tortilla in half.
03 - Heat a non-stick skillet over medium heat with olive oil or butter. Cook folded tortilla 2-3 minutes per side until golden and crispy.
04 - Slice quesadilla into wedges using a sharp knife or pizza cutter. Serve while warm.
