Spinach Ricotta Stuffed Shells (Print Version)

# Ingredients:

→ Pasta

01 - 12 jumbo pasta shells

→ Cheese Filling

02 - 1½ cups ricotta cheese
03 - 1 cup mozzarella cheese, shredded (plus extra for topping)
04 - ½ cup parmesan cheese, grated
05 - 1 large egg
06 - ¼ teaspoon nutmeg (optional)

→ Vegetables and Aromatics

07 - 1 cup fresh spinach, chopped (or ½ cup frozen spinach, thawed and drained)
08 - 2 cloves garlic, minced
09 - 1 tablespoon olive oil

→ Sauce and Seasonings

10 - 2 cups marinara sauce
11 - Salt and pepper to taste
12 - Fresh basil or parsley for garnish

# Instructions:

01 - Preheat oven to 375°F (190°C). Cook pasta shells until al dente
02 - Sauté garlic in olive oil, add spinach and cook until wilted. Season with salt and pepper
03 - Combine ricotta, mozzarella, parmesan, egg, nutmeg, and spinach mixture
04 - Spread marinara in baking dish, stuff shells with cheese mixture, top with remaining sauce and cheese
05 - Cover and bake 25 minutes, uncover and bake 10 more minutes until bubbly. Garnish with herbs

# Notes:

01 - Add red pepper flakes for heat. Pairs well with salad or garlic bread
