01 - 16 ounces mushrooms
02 - 1 tablespoon olive oil
03 - 2 tablespoons butter, divided

12 - 1/2 teaspoon black pepper
13 - 1/4 teaspoon chili powder
14 - 1/2 teaspoon browning sauce (like Gravy Master), optional
15 - Fresh chives, chopped, for garnish

# Instructions:

01 - Clean the mushrooms by wiping them with a damp cloth and trim off any dry parts of the stems.
02 - Heat a medium skillet over medium heat. Add the olive oil and 1 tablespoon of butter. Once the butter melts, add the mushrooms to the skillet and sprinkle them with kosher salt. Let them cook undisturbed for about 3 minutes to get a good sear.
03 - While the mushrooms are cooking, combine the paprika, onion powder, dried oregano, dried tarragon, black pepper, and chili powder in a small bowl; set this spice mix aside. Add the minced garlic and the prepared spice mix to the mushrooms. Stir well and cook for an additional 1 to 2 minutes until the garlic is fragrant and the spices are evenly distributed.
04 - If using browning sauce, stir it into the skillet now and cook for another 1 to 2 minutes. This will coat the mushrooms well and give them a rich, dark color and a slightly sweet taste.
05 - Pour in the Worcestershire sauce and soy sauce. Stir everything together and allow to cook for another 2 to 3 minutes. The sauce should reduce slightly, and the mushrooms will absorb most of the liquid, becoming very flavorful. Finish the dish by stirring in the remaining tablespoon of butter until melted and mixed through for a glossy, rich finish.
06 - Sprinkle chopped chives over the mushrooms before serving for a fresh, oniony crunch and a pop of color.
