Strawberry Cheesecake Cookies (Print Version)

# Ingredients:

01 - 1/2 cup unsalted butter, softened.
02 - 1/2 cup granulated sugar.
03 - 1/2 cup brown sugar.
04 - 1 large egg.
05 - 1 teaspoon vanilla extract.
06 - 1 3/4 cups all-purpose flour.
07 - 1/2 teaspoon baking soda.
08 - 1/4 teaspoon baking powder.
09 - 1/4 teaspoon salt.
10 - 1/2 cup freeze-dried strawberries, crushed.
11 - 4 ounces cream cheese, softened.
12 - 2 tablespoons granulated sugar, for filling.
13 - 1 teaspoon vanilla extract, for filling.
14 - 1/4 cup strawberry jam.

# Instructions:

01 - Mix softened cream cheese, sugar, vanilla, and strawberry jam until smooth. Chill in fridge.
02 - Beat butter with both sugars until light and fluffy. Add egg and vanilla, mix well.
03 - Whisk flour, baking soda, baking powder, and salt. Gradually add to wet ingredients.
04 - Fold crushed freeze-dried strawberries into dough. Chill for 30 minutes.
05 - Flatten dough portions, add filling, seal edges and roll into balls.
06 - Place on lined baking sheet, bake at 350°F for 12-15 minutes until edges turn golden.
