Strawberry Swirl Cheesecake (Print Version)

# Ingredients:

01 - 1½ cups graham cracker crumbs.
02 - ⅓ cup melted butter.
03 - ¼ cup sugar.
04 - 32 oz (4 packages) cream cheese, softened.
05 - 1¼ cups sugar.
06 - 1 teaspoon vanilla extract.
07 - 4 large eggs.
08 - 1 cup sour cream.
09 - 1 cup fresh strawberries, hulled and diced.
10 - 2 tablespoons sugar.
11 - 1 tablespoon lemon juice.

# Instructions:

01 - Heat oven to 325°F. Grease a 9-inch springform pan.
02 - Mix graham cracker crumbs, melted butter, and sugar. Press mixture into the bottom of the pan.
03 - Beat cream cheese until smooth. Mix in sugar and vanilla until well combined. Add eggs one at a time, beating well after each. Fold in sour cream until smooth. Pour filling over crust.
04 - Blend strawberries, sugar, and lemon juice until smooth. Drop spoonfuls of puree onto cheesecake batter. Use a knife to create a swirl pattern.
05 - Bake for 55-60 minutes until the center is set. Cool in the pan, then refrigerate 4 hours or overnight.
