01 - 2 medium sweet potatoes, peeled and sliced into 1/2-inch rounds
02 - 2 tablespoons olive oil
03 - Salt and pepper, to taste
04 - 4 oz goat cheese, softened
05 - 1/2 cup chopped pecans, toasted
06 - 3 tablespoons honey (plus more for drizzling)
07 - 1/2 teaspoon cinnamon (optional)
08 - Fresh thyme or rosemary for garnish (optional)

# Instructions:

01 - Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper for easy cleanup.
02 - Arrange the sweet potato rounds on the prepared baking sheet. Brush both sides lightly with olive oil and season with salt and pepper. Roast for 20-25 minutes, flipping halfway through, until they're fork-tender and getting golden around the edges.
03 - While the potatoes are roasting, toast the chopped pecans in a dry skillet over medium heat for 3-5 minutes, stirring frequently until they become fragrant. Remove from heat and set aside.
04 - Let the sweet potato slices cool slightly. Top each slice with a dollop of softened goat cheese. Sprinkle the toasted pecans over the cheese. Drizzle with honey and sprinkle with cinnamon if using.
05 - Garnish with fresh thyme or rosemary if desired. Serve warm or at room temperature as an appetizer or side dish.
