Italian Coffee Cupcakes (Print Version)

# Ingredients:

01 - 1 1/4 cups all-purpose flour.
02 - 1/2 teaspoon baking powder.
03 - 1/4 teaspoon baking soda.
04 - 1/4 teaspoon salt.
05 - 3/4 cup granulated sugar.
06 - 1/2 cup unsalted butter, softened.
07 - 2 large eggs.

09 - 1/2 cup sour cream.
10 - 1/4 cup espresso or strong coffee, cooled.
11 - 1/2 cup espresso or strong coffee (for the Coffee Soak).
12 - 2 tablespoons coffee liqueur (optional).
13 - 1 cup mascarpone cheese.
14 - 1/2 cup powdered sugar.
15 - 1 teaspoon vanilla extract (for the Frosting).
16 - 1 cup heavy whipping cream.
17 - Cocoa powder for dusting (for Garnish).
18 - Chocolate curls or grated chocolate (for Garnish).

# Instructions:

01 - Heat oven to 350°F. Put paper liners in your muffin tin.
02 - Stir flour, baking powder, baking soda, and salt in a bowl.
03 - Beat sugar and butter until fluffy.
04 - Add eggs one at a time, then mix in vanilla.
05 - Stir in sour cream and coffee. Mix in dry ingredients slowly until just combined.
06 - Fill liners 3/4 full with batter.
07 - Bake 18-20 minutes until done. Let cool.
08 - Mix coffee and liqueur.
09 - Poke holes in cooled cupcakes and brush with coffee mix.
10 - Beat mascarpone, sugar, and vanilla until smooth. Whip cream separately until stiff. Fold whipped cream into mascarpone mix.
11 - Top cupcakes with frosting.
12 - Dust with cocoa powder and add chocolate curls.
