# Ingredients:

→ Main Ingredients

01 - 1 pound ground turkey
02 - 2 medium sweet potatoes, peeled and diced
03 - 2 medium zucchinis, diced
04 - 1 medium onion, diced
05 - 2 cloves garlic, minced
06 - 1 tablespoon olive oil

→ Seasonings

07 - 1 teaspoon smoked paprika
08 - 1 teaspoon Italian seasoning
09 - Salt and pepper to taste

→ Topping

10 - 1 cup shredded cheese (cheddar or mozzarella)
11 - Fresh parsley for garnish (optional)

# Instructions:

01 - Preheat your oven to 400°F (200°C) and grease a large baking dish with olive oil.
02 - In a large skillet over medium heat, add the olive oil. Once hot, add the diced onion and minced garlic. Sauté until the onion is translucent, about 3-4 minutes.
03 - Add the ground turkey to the skillet. Cook until browned, breaking it apart with a spoon as it cooks, about 5-7 minutes. If there's excess fat, drain it off.
04 - Stir in the diced sweet potatoes, zucchinis, smoked paprika, Italian seasoning, salt, and pepper. Cook for an additional 5-7 minutes until the vegetables start to soften.
05 - Transfer the turkey and veggie mixture to the prepared baking dish and spread it out evenly. Sprinkle shredded cheese over the top.
06 - Bake in the preheated oven for about 25-30 minutes until the sweet potatoes are tender and the cheese is bubbly and golden.
07 - Remove from the oven and let cool for a few minutes. Before serving, garnish with fresh parsley if desired.

# Notes:

01 - This recipe is high in lean protein from the turkey and packed with vitamins from the sweet potatoes and zucchini.
02 - Leftovers can be stored in an airtight container in the refrigerator for up to 3 days and make excellent next-day lunches.
03 - For a dairy-free version, you can omit the cheese or use a dairy-free cheese alternative.
04 - Serve with a fresh salad for a complete meal or some crusty bread to soak up the flavors.
