01 - 1 lb boneless, skinless chicken breasts
02 - 4 cups chicken broth
03 - 1 can (15 oz) white beans, drained and rinsed
04 - 2 cups fresh spinach
05 - 2 large carrots, diced
06 - 1 medium onion, chopped
07 - 2 cloves garlic, minced
08 - 2 tbsp olive oil
09 - Salt and pepper to taste
10 - Fresh parsley, chopped (for garnish)
11 - Crusty bread (for serving)

12 - 1 tsp dried oregano
13 - 1 tsp dried thyme
14 - ½ tsp red pepper flakes

# Instructions:

01 - Heat olive oil in a large pot over medium heat. Add onion and carrots, sauté for 5-7 minutes until onion becomes soft and translucent
02 - Add minced garlic and sauté for 1 minute. Stir in oregano, thyme, salt, pepper, and red pepper flakes
03 - Add chicken breasts and broth. Bring to a gentle boil, then reduce heat and simmer covered for 20 minutes until chicken is cooked through
04 - Remove chicken, shred with two forks, and return to the pot
05 - Add white beans and spinach. Cook for 5 more minutes until spinach wilts and everything is heated through
06 - Adjust seasoning to taste. Serve hot garnished with fresh parsley and crusty bread on the side
