Preheat oven to 350°F. Bake puff pastry sheets on baking sheets for 10 minutes until golden. Cool.

Boil 3 cups milk. Whisk egg yolks with sugar until fluffy, add flour, vanilla, rum, and remaining milk.

Fold egg mixture into boiling milk and stir until thickened. Remove from heat.

Beat egg whites until stiff peaks form, fold into custard mixture.

Place one pastry sheet in baking dish, spread with custard. Chill 1-2 hours.

Add whipped cream layer, top with pastry cut into squares. Chill 2 hours more.
