Vegan Cinnamon Doughnut Muffins (Print Version)

# Ingredients:

01 - 1 cup all-purpose flour.
02 - 3/4 cup whole wheat flour.
03 - 3/4 cup dark brown sugar.
04 - 1 tablespoon baking powder.
05 - 1/2 teaspoon salt.
06 - 1 teaspoon ground cinnamon.
07 - 8 ounces unsweetened applesauce.
08 - 4 ounces almond milk.
09 - 4 ounces olive oil.
10 - 2 tablespoons maple syrup.
11 - Topping: 2 tablespoons sugar, 1 teaspoon cinnamon.
12 - Optional Glaze: 1/2 cup confectioners' sugar, 2 teaspoons almond milk.

# Instructions:

01 - Preheat oven to 400°F.
02 - Grease or line muffin tray.
03 - In a large bowl, mix flours, sugar, baking powder, salt, and cinnamon.
04 - Separately, whisk applesauce, almond milk, oil, and maple syrup.
05 - Combine wet and dry ingredients until just mixed.
06 - Fill muffin cups 2/3 full.
07 - Sprinkle with cinnamon sugar topping.
08 - Bake for 18-20 minutes.
09 - Cool in pan for 20 minutes, then transfer to a cooling rack.
10 - Mix glaze ingredients and drizzle over cooled muffins.
