Creamy Vodka Pasta (Print Version)

# Ingredients:

01 - Penne pasta, 12 ounces.
02 - Extra virgin olive oil, 1 tablespoon.
03 - Unsalted butter, 2 tablespoons.
04 - Fresh garlic cloves, minced, 2.
05 - Red pepper flakes, 1/2 teaspoon (optional).
06 - Vodka, 1/4 cup.
07 - Crushed tomatoes, 14 ounce can.
08 - Heavy cream, 1/2 cup.
09 - Parmesan cheese, freshly grated, 1/4 cup plus more for serving.
10 - Salt and black pepper to taste.
11 - Fresh basil leaves, chopped, 2 tablespoons plus more for garnish.

# Instructions:

01 - Boil pasta in salted water until al dente. Save 1/2 cup pasta water before draining.
02 - Heat oil and butter in large pan. Cook garlic and pepper flakes until fragrant.
03 - Pour in vodka and simmer 2-3 minutes to cook off alcohol.
04 - Add tomatoes and simmer 5-7 minutes. Stir in cream and cook until smooth.
05 - Toss pasta with sauce, adding pasta water if needed for consistency.
06 - Mix in cheese and basil. Season with salt and pepper. Garnish with extra cheese and basil.
