Apple Crisp Cheesecakes (Print Version)

# Ingredients:

01 - 3/4 cup graham crumbs.
02 - 1 1/2 tablespoons white sugar.
03 - 1/2 teaspoon ground cinnamon.
04 - 3 tablespoons melted unsalted butter.
05 - 1/3 cup plain flour.
06 - 1/3 cup brown sugar, packed.
07 - 1/3 cup quick oats.
08 - 3/4 teaspoon ground cinnamon.
09 - 1/8 teaspoon ground nutmeg.
10 - 2 1/2 tablespoons melted butter.
11 - 2 small apples, peeled and diced small.
12 - 2 teaspoons fresh lemon juice.
13 - 1 1/2 teaspoons ground cinnamon.
14 - 1/4 teaspoon ground nutmeg.
15 - 2 tablespoons brown sugar.
16 - 1 1/2 teaspoons cornstarch.
17 - 10 ounces soft cream cheese.
18 - 6 tablespoons sugar.
19 - 1 1/2 teaspoons vanilla.
20 - 2 teaspoons flour.
21 - 1 large egg.
22 - Caramel sauce for topping.

# Instructions:

01 - Put paper liners in your cupcake pan. Heat your oven to 325°F.
02 - Mix graham crumbs with sugar and cinnamon. Add melted butter and stir well. Press into the bottom of liners and chill.
03 - Combine flour, brown sugar, oats, and spices. Add melted butter and mix until crumbly. Put in fridge.
04 - Beat cream cheese, sugar, vanilla and flour until smooth. Mix in egg just until combined. Spoon over crusts.
05 - Toss cut apples with lemon juice, then mix in brown sugar, cornstarch, and spices. Put on top of cheese filling.
06 - Sprinkle oat mixture on top. Bake about 30 minutes at 325°F.
07 - Let cool in pan for 30 minutes, then move to fridge. Top with caramel sauce when serving.
