Sweet apple-filled pastry bites (Print Version)

# Ingredients:

→ For the Apple Filling

01 - 2 medium apples, peeled, cored, and diced
02 - 2 tablespoons unsalted butter
03 - 1/3 cup granulated sugar
04 - 1 teaspoon ground cinnamon
05 - 1 tablespoon cornstarch
06 - 2 tablespoons water

→ For the Dough

07 - 1 can refrigerated biscuit dough (8 biscuits)
08 - 1/2 cup unsalted butter, melted
09 - 1 cup granulated sugar
10 - 1 tablespoon ground cinnamon

# Instructions:

01 - Melt the butter in a saucepan over medium heat. Toss in your diced apples along with the sugar and cinnamon. Let them cook for about 5 minutes, stirring now and then until the apples start to soften. Mix the cornstarch and water in a small bowl until smooth, then pour this into the apple mixture. Keep cooking for another minute or two until everything thickens up nicely. Take it off the heat and let it cool down a bit while you work on the dough.
02 - Heat your oven to 375°F and line a baking sheet with some parchment paper. This will keep the bombs from sticking and make cleanup way easier.
03 - Pop open your can of biscuit dough and separate the biscuits. Take each one and flatten it out with your hands or a rolling pin until it's about 1/4-inch thick. Don't worry about making perfect circles – rustic is fine!
04 - Spoon about a tablespoon of your apple filling right in the middle of each flattened biscuit. Fold the edges up and over the filling, pinching them together to seal everything up into a little ball. Make sure there aren't any openings where the filling might escape during baking.
05 - Dip each of your sealed dough balls into the melted butter, making sure they're coated all over. Then roll them in the cinnamon-sugar mixture until they're completely covered in sweet goodness. Place them on your baking sheet with the seam side down.
06 - Slide your tray into the oven and bake for 12-15 minutes. You'll know they're done when they've turned a gorgeous golden brown color. The kitchen will smell amazing!
07 - Let your apple pie bombs cool for just a few minutes – you want them warm but not burn-your-mouth hot. These are best enjoyed fresh from the oven when the centers are still gooey and the outsides are crisp and sweet.

# Notes:

01 - These bite-sized treats give you all the flavor of apple pie without the fuss of making a whole pie. They're perfect for parties, after-school snacks, or whenever you need a quick dessert fix.
02 - For the best results, use firm apples like Granny Smith or Honeycrisp that won't turn to mush when cooked. The tartness of these varieties also balances the sweetness of the sugar coating.
03 - You can make these ahead and store them at room temperature for a couple of days, though they're definitely best fresh. To reheat, pop them in the oven for a few minutes to crisp up again.
