Baked Feta Eggs (Print Version)

# Ingredients:

01 - 2 cups cherry or grape tomatoes.
02 - 1 red bell pepper, diced.
03 - 1/2 small red onion, diced.
04 - 3 cloves garlic, minced.
05 - 8 ounces feta cheese.
06 - 4 tablespoons olive oil.
07 - 1 teaspoon dried oregano.
08 - 1 teaspoon sea salt.
09 - 1/2 teaspoon dried thyme.
10 - 1/2 teaspoon black pepper.
11 - 1/2 teaspoon red pepper flakes.
12 - 1 cup baby spinach, chopped.
13 - 4 large eggs.
14 - Fresh basil or chives for garnish (optional).

# Instructions:

01 - Preheat oven to 400°F.
02 - Divide tomatoes, pepper, onion, garlic and feta between dishes. Drizzle with oil.
03 - Mix oregano, salt, thyme, peppers in bowl. Sprinkle over vegetables.
04 - Bake 25 minutes. Remove and stir to mix feta with vegetables.
05 - Stir in spinach. Create wells and crack eggs into them.
06 - Bake 10 more minutes until eggs are set. Garnish with herbs.

# Notes:

01 - Use 10-ounce ramekins or 8x8/9x11 baking dish.
02 - Serve with bread for dipping.
