Chicken Sweet Potato Bowls (Print Version)

# Ingredients:

→ Sweet Potatoes & Chicken

01 - 1 large sweet potato, peeled and diced
02 - 1 tbsp olive oil, divided
03 - 1/2 lb chicken breast, diced
04 - 1/2 tsp paprika
05 - 1/2 tsp garlic powder
06 - 1/2 tsp cumin
07 - 1/4 tsp chili powder
08 - Salt and pepper, to taste

→ Fresh Vegetables

09 - 1 cup fresh spinach or mixed greens
10 - 1/2 cup cherry tomatoes, halved
11 - 1/4 cup cucumber, diced
12 - 1/4 cup red onion, thinly sliced

→ Avocado Dressing

13 - 1 ripe avocado, pitted and peeled
14 - 1 tbsp Greek yogurt
15 - 1 tbsp lime juice
16 - Salt and pepper, to taste

# Instructions:

01 - Preheat oven to 400°F. Toss diced sweet potatoes with oil, salt, pepper, and paprika on a baking sheet. Roast 20-25 minutes until tender.
02 - Season diced chicken with spices. Heat oil in skillet over medium-high heat and cook chicken 6-8 minutes until done.
03 - Blend avocado, yogurt, lime juice, salt, and pepper until smooth. Add water to reach desired consistency.
04 - Divide greens between bowls. Top with sweet potatoes, chicken, tomatoes, cucumber, and onion. Drizzle with avocado dressing.
