Chicken Fried Chicken (Print Version)

# Ingredients:

01 - 6-8 thin sliced chicken breasts.
02 - 2 cups flour.
03 - 2 tsp baking powder.
04 - 1 tsp baking soda.
05 - 1 tsp salt.
06 - 1 tsp pepper.
07 - 1 tsp garlic powder.
08 - 1 1/2 cup buttermilk.
09 - 1 egg.
10 - 1 Tbs hot sauce.
11 - Oil for frying.
12 - 1/4 cup reserved oil from frying for gravy.
13 - 1/3 cup flour for gravy.
14 - 2 cups milk for gravy.
15 - Salt and pepper for gravy.

# Instructions:

01 - Heat oil in deep fryer or large pan to 325°F.
02 - Mix flour, baking powder, baking soda, and seasonings. In separate bowl, mix buttermilk, egg and hot sauce.
03 - Dredge chicken in flour mixture, then egg mixture, then flour again, pressing to adhere.
04 - Fry 3-5 minutes per side until golden brown. Drain on paper towels.
05 - Heat 1/4 cup oil, add flour and cook 1 minute. Gradually add milk, whisk until thickened. Season with salt and pepper.

# Notes:

01 - Can use deep fryer instead of pan.
02 - Can substitute butter for oil in gravy.
03 - Adjust seasonings to taste.
