                Heat oil in deep fryer or large pan to 325°F.

                Mix flour, baking powder, baking soda, and seasonings. In separate bowl, mix buttermilk, egg and hot sauce.

                Dredge chicken in flour mixture, then egg mixture, then flour again, pressing to adhere.

                Fry 3-5 minutes per side until golden brown. Drain on paper towels.
              
              
              
                05 - 
                Heat 1/4 cup oil, add flour and cook 1 minute. Gradually add milk, whisk until thickened. Season with salt and pepper.
