                Let pork rest at room temp 15-30 minutes. Cut bacon into pieces.

                Fry bacon until crispy, about 10 minutes. Remove bacon, leave 2 tablespoons fat.

                Season pork, sear 3-5 minutes per side until done. Remove from pan.

                Add butter if needed, then flour. Cook 30 seconds.

                Add broth, lemon, garlic powder. Reduce then add cream.

                Return bacon and pork to pan, cook 3-5 minutes until sauce thickens.
