Heat oven to 400°F. Wash and dry potatoes, cut each into 6-8 wedges. Place in a bowl and coat with olive oil.

Mix salt, garlic powder, and Italian seasoning in a small bowl. Sprinkle over potatoes and toss. Add Parmesan and toss again.

Line a baking sheet with parchment. Lay wedges in a single layer, skin side down.

Bake 25-35 minutes, flipping halfway through. Wedges should be golden brown and tender inside.
