# Ingredients:

01 - 2 cups almond flour
02 - 1 cup cottage cheese, drained
03 - 4 tablespoons coconut flour
04 - 5 large eggs
05 - ¼ cup melted butter

→ Leavening

06 - 2 tablespoons apple cider vinegar
07 - 1 teaspoon baking soda

→ Topping

08 - Everything bagel seasoning (or mix of sesame seeds, dried garlic, and dried onions)

# Instructions:

01 - Put all ingredients except the seasoning into your food processor and blend until you get a smooth, well-combined mixture.
02 - Let your mixture sit for about 5 minutes to thicken up to the right consistency for shaping.
03 - Grease your donut pan really well with butter, or use a silicone mold. Fill each cavity evenly with batter and sprinkle with seasoning.
04 - Bake at 350°F for 25-30 minutes, until they're nicely golden brown.
05 - Let the bagels cool completely in the pan before removing. If using a regular pan, you might need to gently loosen the edges.
06 - Keep them in the fridge for up to a week, or freeze them for longer storage.

01 - Drain the cottage cheese for about 10 minutes before using to prevent wet dough.
