Lemon Butter Lobster Risotto (Print Version)

# Ingredients:

01 - Arborio rice (1 cup).
02 - Lobster meat, cooked and diced (2 cups).
03 - Vegetable or seafood broth, warm (4 cups).
04 - Shallots, finely chopped (2).
05 - Garlic cloves, minced (2).
06 - Butter (3 tablespoons).
07 - Parmesan cheese, freshly grated (1 cup).
08 - Lemon zest and juice (1 lemon).
09 - Salt and pepper to taste.
10 - Fresh parsley for garnish.

# Instructions:

01 - Chop shallots, garlic, and lobster. Have all ingredients ready.
02 - Melt butter, cook shallots until soft, then add garlic for 1 minute.
03 - Add rice and stir 2-3 minutes until lightly toasted and coated.
04 - Add warm broth gradually, stirring until absorbed before adding more. Cook 18-20 minutes.
05 - Remove from heat. Add lobster, butter, cheese, lemon zest and juice.
06 - Top with extra cheese, lemon, and parsley if desired.

# Notes:

01 - Use freshly grated parmesan for best results.
02 - Keep broth warm while cooking.
03 - Can turn leftovers into arancini.
