Millionaires Cheesecake (Print Version)

# Ingredients:

01 - 1 cup all-purpose flour (125g).
02 - 1 stick butter (114g) for base.
03 - 1/4 cup white sugar (50g) for base.
04 - 1/4 teaspoon salt for base.
05 - 3 1/4 cups cream cheese (740g), room temperature.
06 - 1/2 cup white sugar (100g) for filling.
07 - 3 tablespoon powdered sugar.
08 - 1 cup heavy whipping cream (240ml).
09 - 1 teaspoon vanilla extract.
10 - 1 cup light brown sugar (200g).
11 - 2 sticks butter (227g) for caramel.
12 - 1/3 cup golden corn syrup (100g).
13 - 1 can condensed milk (397g).
14 - 1 teaspoon salt for caramel.
15 - 1 cup dark chocolate (175g), chopped.
16 - 1/2 cup whipping cream (120ml) for ganache.

# Instructions:

01 - Process flour, butter, salt, and sugar until crumbly. Press into pan. Bake at 350°F for 20 minutes.
02 - Whip cream separately. Mix cream cheese, sugars, and vanilla. Fold in whipped cream. Spread over cooled base.
03 - Boil sugar, butter, and syrup. Add condensed milk and salt. Boil 1 minute until thick. Cool 90 minutes.
04 - Reserve 1/4 caramel for serving. Spread rest over cheesecake. Chill overnight.
05 - Pour hot cream over chocolate. Let sit, then stir until smooth. Cool and spread over caramel.
06 - Chill until set. Remove from pan. Drizzle with reserved warm caramel when serving.

01 - Can add chocolate layer on base to prevent sogginess.
02 - Requires overnight chilling.
03 - Use full-fat cream cheese.
