Pizza Beans (Print Version)

# Ingredients:

01 - 1 medium yellow onion.
02 - 2 cloves garlic.
03 - 2 (15-ounce) cans cannellini or butter beans, drained.
04 - 2 tablespoons olive oil.
05 - 1/2 teaspoon dried oregano.
06 - 5 ounces baby spinach.
07 - 2 1/2 cups marinara sauce.
08 - 8 ounces shredded mozzarella cheese.
09 - 4 sprigs fresh basil.
10 - 1/4 cup grated Parmesan cheese.
11 - Red pepper flakes (optional).
12 - Honey (optional).
13 - Garlic bread for serving.

# Instructions:

01 - Position rack in top third of oven, heat broiler.
02 - Slice onion and garlic.
03 - Heat oil in 10-inch broiler-safe skillet.
04 - Cook onions until brown, 5-8 minutes.
05 - Add garlic and oregano, cook for 30 seconds.
06 - Add spinach in batches until wilted.
07 - Add beans and marinara sauce.
08 - Cook until bubbling, 3-5 minutes.
09 - Top with mozzarella cheese.
10 - Broil until cheese browns, 3-5 minutes.
11 - Top with Parmesan and torn basil. Add red pepper flakes and honey if desired.
12 - Serve with garlic bread.

# Notes:

01 - Make ahead by assembling and refrigerating up to 1 day. Reheat at 350°F for 15 minutes, then broil.
02 - Leftovers keep 4 days in fridge.
