Cut chicken into 1-inch pieces and pat dry with paper towels.

Mix flour, salt and garlic powder in shallow bowl. Put buttermilk and panko in separate bowls.

Dredge chicken in flour, then buttermilk, then panko, pressing to adhere.

Fill pot with 2-3 inches oil and heat to 350°F.

Cook chicken in batches 2-3 minutes until golden brown. Drain on paper towels.
