Mix graham cracker crumbs, 1/4 cup sugar, and melted butter until it looks like wet sand. Press firmly into the bottom of your pan and bake for 8 minutes. Let it cool while you make the filling.

Beat that softened cream cheese until it's perfectly smooth - no lumps! Add the 2/3 cup sugar and mix well. Beat in eggs one at a time, then stir in vanilla and sour cream.

Divide your cheesecake mixture into six small bowls. Add a different food coloring to each bowl - think rainbow order! Start with a tiny bit and add more until you get the colors you love.
