Chewy Sugar Cookies (Print Version)

# Ingredients:

01 - 2½ cups all-purpose flour, spooned and leveled.
02 - ½ teaspoon baking powder.
03 - ½ teaspoon baking soda.
04 - ½ teaspoon salt.
05 - ¾ cup unsalted butter, cool room temperature.
06 - 1¼ cups sugar, plus ¼ cup for rolling.
07 - 1 large egg.
08 - 1 large egg yolk.
09 - 2 teaspoons pure vanilla extract.

# Instructions:

01 - Heat oven to 350°F. Line baking sheets with parchment paper.
02 - Whisk flour, baking powder, baking soda and salt until well combined.
03 - Beat butter and sugar until light and fluffy, about 2 minutes. Mix in egg, yolk and vanilla.
04 - Add dry ingredients to wet. Mix on low just until combined.
05 - Roll into 1-inch balls. Coat in sugar if desired. Place 3 inches apart on sheets.
06 - Bake one sheet at a time for 8-9 minutes until tops are barely set. Don't overbake.

01 - Cookies stay fresh 5 days at room temperature in airtight container.
02 - Freezes well up to 3 months.
03 - No dough chilling required.
